Abundantly sweet, with juicy white grape and bright-but-balanced pomelo upfront. Subtle florals of jasmine linger, while everything is underpinned by the warming toastiness of almond croissant.

Grown on Mynor Edelmiro Lopez’s four-hectare farm, Finca Los Cipreses.  Located in the Huehuetenango region of northern Guatemala near the Mexican border. Historically, the property was only used for grazing cattle and horses but on inheriting the farm from his father some sixteen years ago, Mynor transitioned the property to growing coffee, grains, and citrus fruit. Only in the last 2 years has Mynor made the transition to producing higher quality coffee for the specialty market. 

After ripe cherries are harvested, the skins are removed from the fruit-covered seeds inside. The seeds are then dry-fermented in concrete tanks for around 24 hours prior to washing, grading, and drying on concrete patios for an average of 12 days.
