This coffee comes from three small-scale farmers in the Huehuetenango region of northern Guatemala, and is a blend of day lots scoring over 86 points.
Each of the farms that contributed to this lot sits between 1,400 and 2,000 metres elevation in the Sierra de Los Cuchumatanes — one of the highest non-volcanic mountain ranges in Central America.
While the El Mirador blend typically comprises coffees from up to 12 farmers, this particular selection comes from just three: Ruben Garcia López, Maruca Claudio Ramirez, and Santos Darinel Alva Velasquez.
As farms in the Huehuetenango region typically have ready access to fresh water, it’s common for small-scale growers to process their own coffee on-site. Here, the cherries have been pulped and fermented for 24 - 30 hours before washing, grading, and drying on either raised bed or concrete patios.
After the coffee is processed and dried, each day lot is evaluated by our export partner, Caravela. The lots that score in excess of 86+ points are consolidated into the El Mirador blend.
