Los Pirinous is located between the towns of Berlin and Santiago de Maria in El Salvador, where the Baraona family has been producing coffee for over 130 years. Their farm boasts one of the largest collections of coffee varietals, which contributes to the unique and exceptional quality of their coffee. Los Pirinous has achieved numerous accolades, including 17 Cup of Excellence awards. The farm is widely respected by exporters, buyers, and cuppers, and is renowned for producing some of the highest quality coffees in El Salvador. Los Pirineos features a man-made plateau that overlooks the Tecapa volcano. Extensive drying beds stretch across the plateau, allowing for a variety of processed coffees to be dried. The plateau ensures that the beans get a full day's worth of sunlight, and the westerly winds provide even and consistent drying.

This coffee is a 'supernatural' processed coffee. Supernatural is the bespoke term given by supplier project origin to describe the unique carbonic maceration process used when processing this coffee. CM processing is used to boost flavour, sweetness and body characteristics. This process is often a combination of manipulating the fermentation and drying stages of the coffee. The supernatural coffees are fermented as whole cherries often in sealed bags or containers, where they absorb red, orange and yellow fruit flavours. The drying process is long and slow, to further develop sweetness. This results in fruit-forward, juicy coffees.

Diego together with his sister Fabiola, continue to add to his father's legacy.
